I recently saw an episode of pioneer woman on the food network. In the episode "chocolate day" she made this amazing corn bacon chowder. It looked so easy and quick so I thought "I can do that!"
After a brunch date at oddfellows i made a trip to central market. The only thing i absolutely hate about going to central market is the produce and those dam ticket scales. Seriously! Every one was in use and of course I'm stuck behind an elderly woman who doesn't understand why it won't work for her. After a moment of frustration I intervened and showed her how to print the ticket. I needed a lot of produce so I got a couple of frowns and groans behind me. They need to come up with a better method I think!
The prep time on this thing does take a while (lots of chopping) but it is worth the wait. Also to my vegetarian friends please keep in mind you can substitute the chicken broth for vegetable broth and the bacon for potatoes.
Ingredients are:
1 yellow bell pepper
1 red bell pepper
1 orange bell pepper
1/2 a stick of butter
1/4 cup flour
1/2 chopped yellow onion
2 cups of corn kernels
3 cups chicken stock
2 cups half and half
1/2 cup Monterrey jack cheese
1/2 cup pepper jack cheese
3 scallions chopped
Salt and pepper to taste
Like I said prep all of your items first and this will go a lot faster. Melt your butter on a medium high setting in a large Dutch oven or pot. Throw in half of a chopped onion and cook until onions are translucent. Then add your bacon. Let cook for about three minutes and add your bell peppers. I used about half of each bell pepper finely chopped and seeded. Let cook until soft (about three minutes). Add your corn and stir. Wait another three minutes. Incorporate your
flour and then slowly mix in your chicken stock and let simmer for about five minutes. Then slowly add two cups of creme and turn to a low setting. Simmer for 15 minutes. Once it's thickened add your green onions and cheese. I added about 1/2 a teaspoon of freshly ground pepper and 1 tablespoon salt. I also had some bacon crumbles, cheese, and green onion to garnish it with. This recipe called for this to be put in bread bowls but I just used some delicious French baguette and it was still great. David loved it! And it's true I think. A way to a mans heart is through his stomach. Bon appetite!
